In this show, we are joined by Ben Salif Traore and Chrissy Traore, the husband and wife team of a cafe, wholesale bakery and provisions market in Cairo called See & Be Kitchen. Fermentation, in all meanings of the word, extends to each part of their business. From crafting sourdough bread and croissants using a wild and long fermentation process to supporting the regional economy through partnerships with local businesses. Ultimately, their work is guided by an intention for community members to connect and gather over delicious and nutritious artisanal food.
We will discuss their sourdough practice, explore their research and development process, particularly touching on the different variables that impact the final loaf as well as how to balance experimentation and consistency as professional bakers, and dive deeper into their experiences creating their signature Country White loaf and unique sourdough croissants.
