In this show, we are joined by Suresh Pillai and Carrie Dashow, the married team behind Atina Foods. Atina Foods is an award-winning, delicious, and endlessly creative Catskill-based fermentation business. Firmly rooted in food as medicine medicine as food, Atina offers a range of healthful and tasty fermented condiments using the abundance from Hudson Valley Farms and following the traditional knowledge system of Ayurveda. Their work spans markets, festivals, a seasonal home store, online retailers, educational workshops, on-site meals, and more. Each activation is grounded in nurturing deeper connections with the natural world and cultivating synchronicity between the mind, body and spirit.

We have a special sonic extension of their pickling practice in this show. We also discuss the unique qualities of their fermentation work, how Ayurvedic principles intersect with their ferments and operations, and the possibility of forming relation and awakening a kind of somatic knowing by engaging in fermentation.
