In this show, we are joined by Nika Carlson, the owner, grower, and fermenter of Greenpoint Cidery. On a 1-acre property outside of Hudson, Nika grows wild apples that she sourced locally and grafted onto commercial trees and produces small-scale and experimental batches of cider and folk wines by hand. Rooted in reverence for the natural environment and the craft of alcoholic fermentation, Nika abstains from filtering and fining, highlights native yeasts, and uses low-intervention cultivation methods. Her libations can be found wholesale at bars, restaurants, wine and cheese shops as well as by delivery, through her seasonal CSA, and on the sustainable cargo ship called the Schooner Apollonia. Mugwort. Aronia berries. Dandelion. Autumn Olives. Deeply personal, exploratory, and creative, Nika often infuses her creations with local forage, herbs, and flowers, in a way that honors the oft overlooked flavor possibilities and ecological abundance that can be found throughout the Hudson Valley.
