In this show, we are joined by the founders of Yesfolk, Yiyi Mendoza and Adam Elabd. Yesfolk is a small family-owned brewery and tasting room in Troy that specializes in kombucha and kombucha vinegar. Available online, at retailers or in-person, their range of barrel-fermented beverages contain live cultures, explore the complexity of flavor in single-origin teas and often incorporate a range of herbs, botanicals and aromatics. Visitors to their space can pair the tonics with small plates that pay homage to their respective Mexican and Egyptian heritage. Fermentation also permeates in a communal sense at the multitude of events organized or hosted by Yesfolk that seek to cultivate joy and express collective care for individuals near and far.

From fermenting at home to producing kombucha sold at a national scale, Yesfolk maintains a deep commitment to their local roots and multicultural identities. In this discussion, we will explore how they scaled up production in a carefully designed space, what they learned and shared in unique collaborations with other fermentation-focused businesses and why community remains the guiding light in their work.
