Old Chatham farm has fresh turkeys

Michael DeMasi reports in the Albany Business Review about how the Dog Wood Farm in Old Chatham raises turkeys the way farmers did one-hundred years ago. The farm only sells slaughtered turkeys, no frozen birds. The 200 turkeys on the 87-acre farm roam free in a pasture until they reach the chopping block. "I think there’s a been a real turning point in terms of people's interest in directly connecting to the people who grow their food," said Hilary Corsun, who owns Dog Wood Farm with her partner, Sara Querbes. "We’re looking to establish relationships with our customers." Those customers pay $6 per pound for the free-range birds, more than the $1.29 a pound fresh turkeys at Market 32/Price Chopper or Hannaford and the 39 cents per pound at frozen birds at Hannaford. "Our customer base is really diverse," Corsun said. "I would say everyone is obviously in a position to have the ability to make the choice to spend more on food. They're people from all different occupations." But the farm is not profitable yet. "It's very much in its formative stage but heading in the right direction," Corsun said.
