Jamie Larson's interview with chefs Ben Freemole and John McCarthy appears in the Feb. 21 edition of the Register Star. The chefs honed their skills at Wylie Dufresne's WD-50, the restaurant that brought "molecular gastronomy" to Manhattan's LES.
