Kinderhook restaurant proposal moving forward

Emilia Teasdale is reporting for The Columbia Paper the Kinderhook Village Planning Board were presented December 3, with the most recent plans for the Aviary Restaurant with building owner Darren Waterston. The meeting was conducted via Zoom. Waterston announced he is now the owner of numbers 2, 4 and 8 Hudson Street, and that he and his business partner, chef Yen Ngo, are planning to open a restaurant this summer in the space. Waterston said the restaurant will feature locally sourced food so the traffic impact will be minimized. The restaurant will operate between 11:30 a.m. to 2 p.m. Waterston said for now all three buildings will remain separate spaces. Planning Board members initially discussed holding a public hearing on the proposal in January, but chose to set the hearing for Thu., Dec. 17, to provide Waterston with time to address suggestions from the public.
