In this show, we hear an interview with Aya Hirata Kimura about her new book Fermenting for the Future: Japanese Pickles and Microbial Foodways. This interview was recorded at a Fermentation Gathering on August 1, 2026 at Yesfolk Tonics and was co-organized between Darich Perez Reyes of Wild Culture Kitchen, Yiyi Mendoza and Adam Elabd of Yesfolk Tonics and I. In this interview, Aya references photos of tsukemono, or Japanese pickles, that she shared at the event. For visual references of these pickles, please see the links below.
