In this show, we are joined by Wild Arc Farm. Wild Arc is run by a married team of Todd Cavallo and Crystal Cornish at the entrance to the Shawangunks in Pine Bush and produces celebrated beverages across the spectrum from wines to ciders to liquor. Wild Arc minimizes human intervention in their production by employing biodynamic practices, eschewing chemical inputs or additives, and abstaining from filtering or fining. Rather, local microflora and ecologies are venerated through the cultivation of native yeasts and incorporation of hybrid, heirloom and vitis vinifera grape varieties. Wild Arc centers the vineyard and thus the microbes within it as part of a larger ecosystem that imparts unique flavors and aromas to their products. Renowned for bringing piquette to the commercial market, Wild Arc builds upon the storied past of winemaking in New York through their deep knowledge and continuous exploration of the sensory possibilities within alcoholic fermentation.
