The study was conducted in Pocantico Hills (NY), which is characterized by cold climates in the fall compared to other climate zones in the USA. The map shows the USDA Plant Hardiness Zone (https://planthardiness.ars.usda.gov/pages/map-downloads). b) Study compared three individual carrots and cabbages grown in separate fields at the Stone Barns Center for Food and Agriculture, Pocantico Hill (NY, and c) compared microbial probiotic diversity and nutritional quality between ferments made from frost-conditioned carrots and cabbages to ferments made from vegetables protected from frost exposure. D) The first seasonal frost happened in the early morning of November 1, 2023, following an average growing season that started June 30, 2023, for cabbages and July 24, 2023. Samples from the ferment were taken after the fermentation was completed on November 20, 2023.
